The quantity and quality of pectin vary depending on the type of fruit and its degree of ripeness.
In citrus fruits, pectin is present in higher quantities than all other fruits.
But fruits such as apples, quinces, plums, and blueberries are higher in pectin than sugary fruits like strawberries, cherries, raspberries, peaches, and pears.
Pectin is such a versatile ingredient, it is used in the production of many foods, both as a thickener but above all as a stabiliser; fruit drinks, protein drinks, yoghurt drinks, spoonable desserts, and sauces but especially in jams, marmalades, and compotes.
