- 500ml Water
- 40g Cocoa Powder
- 5g Xanthan Gum
- Sweetener (as required)

Method
- Add the xanthan gum and the cocoa powder to a pan.
- Add the water gradually, stirring constantly to avoid the formation of lumps. Add sweetener as required.
- Put the pan on a low heat, stirring constantly until thickened. If lumps remain, blend with a stick blender until smooth. Remove from the heat and allow to cool for a few minutes.
- Put the saucepan back on the hob with the heat off. Add a tablespoon of water and mix with a silicone spatula.
- Moisten two large glass jars and fill them with the chocolate mixture.
- Refrigerate and allow to thicken for at least 30 minutes.
- Add some fruit pieces and enjoy!
