500g icing sugar

50ml honey

10g Agar Agar

Food colouring

Icing sugar (to work the dough)

Method

Put the honey and agar agar in a small saucepan. Heat the mix over a low heat until completely dissolved.

Place the mixture in a blender/processor and add the icing sugar.

Process until the mixture is a dough.

Place the mixture on the work surface and start working it with icing sugar to dust.

Add the food colouring (optional).

*The dough is ready when it no longer sticks to your hands whilst kneading.

*Store wrapped in cling film in a cool, dry place.

*if the fondant is too hard when using it, microwave it for few seconds.
