2 cups banana
1/3 cup coconut oil
1/2 cup honey or agave nectar
1/2 teaspoon vanilla or almond extract
2 cups gluten-free all-purpose flour
2 teaspoons baking powder
1 1/8 teaspoons baking soda
1 teaspoon guar gum
1 teaspoon ground ginger
1/4 teaspoon salt
Preheat the oven to 160°C. Grease 10 cups of a muffin tin.
Mash the bananas with a fork or potato masher, leaving them slightly clumpy. Mix with coconut oil, honey, eggs, and vanilla.
In a large bowl, combine the remaining ingredients. Stir the banana mixture into the dry ingredients and gently mix until combined.
Divide the batter between 10 greased muffin cups. Place in preheated oven and bake for 28 minutes or until a toothpick comes out clean.
