Ingredients

360ml water

3 tbsp honey

2.5 tsp instant yeast

400g gluten-free flour

1.5 tsp Xanthan Gum

4 tsp baking soda

1 tsp salt

2 tsp apple cider vinegar

30g olive oil

2 large eggs

Method

Heat the water slightly so it is warm to the touch. Add the honey and yeast. Stir and set aside for 10 minutes.

Combine the powdered ingredients in one bowl and the eggs, oil and apple cider vinegar in another. Add the yeast mixture to the egg mixture and stir for a few seconds. Add the flour mixture and knead well.

Preheat the oven to 190°C and place the mixture in an oiled loaf tin. Bake the bread for about 35-40 minutes until golden brown and hollow when tapped.
