½ tsp XANTHAN GUM
2 tbsp pumpkin puree
1/8 tsp pumpkin spice
¼ tsp sweetener (stevia/sugar/maple syrup/agave syrup)
1 pinch salt
7-10 ice cubes

Method
Place all the ingredients in a mixer.
Blend at high-speed until smooth.
For a coffee shop effect, top with vegan whipped cream and a sprinkle of pumpkin spice.
